Baked Nectarines with Goat Cheese

These baked nectarines with goat cheese, heather honey and fresh thyme are super easy to make and tastes so incredibly good! They are the perfect appetizers or even dessert. The good thing about them is that they only take five minutes to prep and you can even make them some time ahead of your guests arriving. The baked nectarines will also be great choice as a first course and not least, if you serve them with some thin slices of parma ham.

Right now you can get the most juicy and tasteful nectarines in the shops and the sweetness of the fruit matches the creamy goat cheese so well. I have used a Danish heather honey to drizzle over the nectarines. I just love this honey with it’s distinctive and elegant taste and normally I drizzle it over my morning yoghurt with müsli. However, the heather honey accompanying a delicious cheese like goat cheese is also a match made in heaven.

  • 2 nectarines
  • 4 slices of goat cheese
  • fresh thyme, chopped
  • acacia honey
  1. Preheat oven to 390 °F
  2. Prepare the nectarines by removing the pit. Cut the nectarines in half and place in oven proof dish. Add a slice of goat cheese on each nectarine and drizzle with acacia honey. Top with fresh thyme and bake for approx. 10 minutes until cheese is lightly browned. Yield 4
