Carrot Cake Recipe

This easy Carrot Cake recipe is simple, tasty and full of good stuff! To me, it’s almost like a cheesecake. I don’t eat flour or artificial sugar, so I wanted to make a cheesecake that didn’t contain any of these, but at the same time satisfied my cheesecake craving. And this one sure did. The bottom is made by shredded raw carrots. Raw carrots do not have the same affect on the blood sugar, as baked carrots do, and the heavy cream cheese and sour cream adds some sourness to the cake, which makes it just about the perfect carrot cake recipe.

Carrot Cake Recipe - a Cheesecake on a Carrot Crust with Dates & Pecans

  • Crust Ingredients
  • 14.1 oz. peeled carrot
  • 3.5 oz. dried dates
  • 1.8 oz. pecans
  • 1 ½ tbsp. coconut oil
  • 1 tbsp. cinnamon
  • 1 tsp. vanilla powder
  • Cheesecake Ingredients
  • 14.1 oz. cream cheese
  • ⅕ cup sour cream
  • Grated zest of 1 lemon
  • 1 tsp. vanilla powder
  • 2 tbsp. agave syrup
  • Pecans for garnish
  1. Grate the carrots on a grater, and place in a food processor or blender. Blend the grated carrots with dates, pecans, coconut, cinnamon and vanilla until you have a fine paste. However, not too fine, you want to be able to taste the pecans.
  2. Spread batter into a greased spring form pan and press it down firmly on the bottom. Using the heel of your hand, press down evenly.
  3. Stir cream cheese with sour cream.
  4. Add the grated lemon zest and vanilla powder and season to taste with agave syrup.
  5. Spread cream cheese mixture on carrot crust and garnish with pecans.
  6. Set the cheesecake in the refrigerator for a few hours. Serve cold.
