Pea Purée with Wild Salmon

Here is a fast and super easy recipe that works great as a first course but can also be enjoyed as a main course (you just have to double the amount). We always have rye bread in the house, as do most Danes (read more about rye bread right here), but sometimes we are not able to eat the whole bread before it gets a bit  hard and dry. The best tip is then to chop it into small pieces and bake the bread cubes in the oven with butter and olive oil until they are nice and crispy. Then you have some great little bread croutons that are perfect as a salad topping or eaten together with this wild salmon, smoked cheese and pea purée. If you don’t have any rye bread, you can easily substitute it for some whole grain bread. However, rye bread is still preferable as rye bread and salmon are just so good together. My favorite sandwich is two pieces of  homemade rye bread with smoked salmon, cream cheese, mustard, cucumber and lots of dill and black pepper.

Pea Purée with Smoked Cheese, Smoked Wild Salmon & Rye Bread Croutons
  • 8.8 oz. peas
  • 2.8 oz. smoked cheese
  • 3-4 tbsp. greek yogurt
  • salt and pepper
  • 1 tsp. lemon juice
  • 5.3 oz. smoked salmon
  • rye bread into small cubes
  • butter, small cubes
  • olive oil
  • dried marigold (optional)
  1. Preheat oven to 425 °F
  2. Spread the rye bread cubes on a baking sheet lined with parchment paper or wax paper and drizzle with olive oil.  Sprinkle with salt.  Add butter cubes around the baking sheet and bake for approx. 7 minutes, remove from oven, turn the croutons over  and stir around a bit to let them absorb the butter and bake for another 8 minutes until crisp. Let cool.
  3. Blend the peas with smoked cheese, greek yogurt, lemon juice and salt and pepper to a fine purée. On a place arrange pea purée with smoked salmon on top and sprinkle with rye croutons. Garnish with dried marigold (optional). Yield 3 servings
