Spinach Muffins with Feta Cheese, Cottage Cheese & Pesto Cream Cheese

I am a real spinach lover. I love the taste and the fact that I fill my body with lots and lots of vitamins and minerals. I love to put spinach in my salads and often in combination with chickpeas,  feta cheese and red onion. The perfect combo! These spinach muffins are also one of my favorites. They are perfect for the lunch bag or even for breakfast.

I have made a creamy and tasty pesto cream cheese to go with the muffins. And it is sooo good and incredibly easy to make. You simply just mix  cream cheese together with pesto. I can also recommend eating these muffins together with some smoked salmon. It is a great match. I had a whole side of smoked salmon in the fridge that Mikkel brought with him home from his last trip to Iceland and we enjoyed it the other day with a batch of freshly baked spinach muffins. What a great lunch!

Spinach Muffins with Feta Cheese, Cottage Cheese & Pesto Cream Cheese

  • 5.3 oz. fresh spinach leaves
  • 3 eggs
  • 1 egg white
  • 3.5 oz. cottage cheese
  • 3.5 oz. feta cheese
  • 3.5 oz. wheat flour
  • 1 tsp. salt
  • freshly ground pepper
  • 4 tbsp. cream cheese
  • 2 tsp. basil pesto, prepared
Instructions
  1. Preheat oven to 390 °F
  2. Prepare the spinach leaves by rinsing thoroughly. Hint: spinach has a lot of sand hidden within the leaves, it is important to rinse well.
  3. Transfer onto a paper towel to remove excess water.
  4. Put the dry spinach leaves into a food processor or blender and add the three eggs and egg white. Blend well until the spinach is chopped into small pieces and you've got a fine paste.
  5. Transfer the spinach-egg mixture into a bowl.
  6. Add cottage cheese, flour, crumbled feta cheese and salt and pepper to taste. Mix well and pour into muffin tins.
  7. Sprinkle with pumpkin seeds, it tastes great.
  8. Hint: silicone muffin tins work well, they do not need to be greased first.
  9. If using a regular muffin tin, lightly grease before putting the filling in. Bake for approx. 25 minutes.
  10. Prepare the pesto cream cheese by creaming together the cream cheese and your favorite basil pesto until thoroughly blended.
  11. Serve the spinach muffins with a dollop of the pesto.
  12. Yield 8 muffins
