Vegetarian Medallions with Black Beans

Healthy Dinner Recipes-8Sometimes it is nice to substitute the traditional Nordic meatballs made from pork with something else like for example these vegetarian medallions. These medallions are one of my favorite vegetarian dishes, and the wild garlic really gives them a great Nordic twist. From the end of March, you can find wild garlic in almost every forest in Denmark. Well, maybe not in every forest, but they are indeed all over the place!Organic Graider

Vegetarian Medallions with Black Beans

Serves: 2-3
  • 10.6 oz. cooked black beans
  • 2 eggs
  • 1 heaping tbsp. Psyllium Husk Fiber (available at health food stores)
  • ½ green bell pepper, chopped
  • 1 tsp. cumin
  • 1 tsp. salt
  • 1 handful wild garlic, chopped finely
  • 1 handful parsley
  • Olive oil
  1. Soak beans overnight and cook until tender according to package instructions. Let them cool completely.
  2. Combine eggs, psyllium husk fiber, cumin, salt, fresh parsley and wild garlic to taste. Add green bell pepper. Add olive oil to a frying pan on med-high heat. Hint: to test if the oil is hot enough, splatter a drop of water on the oil, it should bounce off.
  3. Shape the mixture into small medallion size shaped meatballs and fry in the hot pan until medium brown. Shake the frying pan occasionally to ensure the medallions do not stick to the pan. Hint: if you use a spoon dipped in water to transfer the medallions to the frying pan, they won’t stick to your hands.
